Fresh today

A sample of what comes out of the ovens. The case changes every day, and Figs posts what's out on Facebook. Prices are at the counter.

6:30 a.m. On bread days

The country loaf is out

Sourdough leaven, with a little commercial yeast only when a dough needs it. Figs uses a gentle, slow method; they say it brings out more nutrients, makes bread easier to digest and deepens the flavor. Bread days move around, so Facebook posts the lineup the day before.

Why so early

Everything starts as flour

Everything at Figs is made in house, starting at 3 a.m. They soft-opened in November 2025, closed to finish the space and sort out equipment, and opened for good in January 2026.

Now they are going a step further. A small mill in the kitchen already grinds spelt and other grains into the croissant dough. In October they closed for a week to attend a whole-grain workshop. The plan: a granite stone mill and organic heritage grains from small farms in Texas, Oklahoma, Arkansas, Kentucky and the Carolinas.

  1. Nov 2025 Soft opening on Captain Shreve Drive
  2. Jan 2026 Open for good
  3. Oct 2026 Spelt milled in-house for the croissants
  4. Next Stone-milled flour from regional heritage grains
